My Best Chocolate Cake

This is my *secret* *amazing* *works-every-time* chocolate cake recipe. I'm claiming it as mine but credit must go to my mum who introduced me to this easy and delicious cake - it's our family go-to because it works, it feeds a crowd and doesn't have any fancy or expensive ingredients. Bonus points because the leftovers taste incredible after sitting in the fridge a night or two. 

Bake it in different tins, decorate it however you like - layered and covered in dark chocolate ganache is a personal favourite, or decorated with fondant for a creative cake - it suits any combination. The cake pictured was baked in a Dolly Varden tin, filled with strawberry cream cheese frosting and chocolate ganache, and decorated with fresh sliced strawberries and white chocolate cake pops. This recipe is just for the basic, delicious chocolate cake. 

I've included the size variations for the recipe because it's useful just to be able to choose how much cake you want without doing the maths every time - you're welcome!


Full recipe | 3/4 recipe | 1/2 recipe (the full recipe makes quite a lot of cake)

Ingredients (A)

2     | 1½   | 1          cups water
3     | 2¼   | 1½        cups white sugar
225 | 170 | 110      grams butter / margarine
4     | 3      | 2          tbsp cocoa
1     | ¾     | ½             tsp bicarb soda

Ingredients (B)

4  | 3     | 2     eggs, beaten lightly
3  | 2¼  | 1½    cups self-raising flour

  1. Preheat oven to 180°C / 170°C fan-forced
  2. Grease and line your cake tin (large roasting tin | 23cm round | 20cm)
  3. Place Ingredients (A) in a large saucepan and bring to boil slowly
  4. Simmer for 5 minutes, and allow to cool
  5. After cooling, add Ingredients (B) to the saucepan and stir with a fork until smooth
  6. Pour into tin and cook for around 45 minutes for the full recipe | 40 minutes for the three-quarter and half. When a skewer inserted into the cake comes out clean and it is springy to the touch, it's done!
